Stephanie Bird
Since my personal experiences trying to learn and understand the ins-and-outs of food intolerances and allergies have not always been simple to figure out, I want to communicate with people and share the information I’ve learned so far and maybe help someone else connect their dots.
I, personally, have several dietary challenges, including gluten and nightshade intolerance, as well as allergies to shellfish, oranges, and aspergillus fungus. I have non-Celiac autoimmune gluten intolerance, nightshade intolerance, migraines, and Interstitial Cystitis.
I am studying Nutrition and Food Sciences, Dietics, with emphasis on special diets for food allergies. I have over ten years of independent studies in this area and am working to finish my degree in this field. I’m currently studying at California State University at Chico. I have also studied at Huntington College of Health Sciences of Knoxville, TN, California State University at Sacramento, and University of California at Santa Cruz.

Thanks! I miss my gluten-free cookies, as well, since I haven’t made any lately. Maybe this weekend? I have been posting more frequently on my Facebook group, Gut Thinking & Nutrition than I have on my blog but I will have many other topics to bring up in depth on the blog as I work on food allergy/nutrition research.
