I find myself shying away from two things when it comes to food.
The first is a pre-made product in the store with mystery ingredients, or unspecified “spices” in it. This fear is legitimate for anyone with food allergies, because many ingredients can legally be stashed in food under the guise of “spices.”
The second is any delicious-looking but overly-complicated recipe, especially one that requires special appliances, contraptions, and tools, *even if I have them!* I want my delicious and healthy with a generous dash of convenience, thank you very much.
As a result, I haven’t been able to enjoy a good breakfast sausage in many years. Which is a shame, because they can be so delicious.
However, I recently came up with a mix of spices and ground turkey that mixes up in minutes and only requires some pre-cut parchment for storage. If you’re looking for something healthier than the links you get in a diner but with at least as much flavor, check out this recipe!
Turkey Breakfast Sausage
Gluten and Nightshade Free
3 tsp sage
1 tsp thyme
1 tsp salt
1 tsp black pepper
1 tsp white pepper
1/2 tsp garlic powder
1/8 tsp mace (or nutmeg if you don’t have mace)
1/8 tsp ground cloves
1/8 tsp allspice
1 pound ground turkey — buy store-bought for the easiest prep, or grind your own. If you grind your own, either use a mix of dark and light meat, or try this with breast meat only and add 2 tbsp of olive oil to the mix (or else it will come out really dry and no one wants that).
Measure and mix all spices together into a bowl. Put ground turkey into a larger bowl and pour spices over the top. Mix with a fork or your hands until the spices are evenly distributed. Roll into balls and flatten into patties on pre-cut squares of parchment paper and put into a container to freeze for later use. Or go ahead and cook them up as is. To prepare, remove from freezer and cook in a heated non-stick skillet for 8 mins, flipping over a couple of times.
Makes 8 2oz sausage patties.
